Domaine Bernard Defaix, Chablis
Allen Meadows, the Burghound himself, recently noted that Sylvain and Didier Defaix are running what is incontestably one of the top 10 estates in Chablis... and yet the wines are completely affordable! As far as this writer is concerned, I will never forget the first sip I took of their Cote de Lechet 1er Cru several years ago... I mean it's easy to locate Chablis on a map, but it was the first wine that I'd ever tried that tasted like it was from the midpoint between Beaune and the Cote de Blancs.
Organic certification didn't seem to hurt the prices and these remain some of the most appealing and accommodating wines in the region. Also look out for the Chalonnaise wines of Domaine Jaeger-Defaix.
